What a day, what a day, what a day & cashew chicken…

Today was not one of my favourites…largely because a really good friend of mine is going through some things. Without going into too much detail, tomorrow I will do everything in my power to make her situation better. Nothing is worse than seeing a good friend suffer unnecessarily…after reading many of your blogs on a daily basis I know you all feel the same way as me.

Aside from the above, I had a healthy day….based on what I consumed and how I exercised. I did unfortunately have a major headache after talking to my friend that’s dealing with a lot right now. Today was also very looong! I am posting much later than usualy- it’s almost 10pm!

* Breakfast was another bowl of Kashi Go Lean Honey Cinnamon Oats mixed with Quaker Oats. I love it. It’s soothing. It fills my belly for a long time. I will one day soon delve into the world of throwing in wonderful other ingredients like nuts, fruits, nut butters, etc. like all you fellow bloggers do…. 🙂

* I had a juicy, delicious, PERFECT orange for a mid-morning snack. I hope I find more at the store that are equally as good as that one!

*Before hearing from my friend about her bad news, me and two of my colleagues/good friends decided to go out for lunch since all the big-wig bosses were out of the office. We generally take advantage of these moments because they are few and far between. I unfortunately did not get a picture of the Beet & Stilton Cheese Salad topped with Grilled Chicken Breast that I had at Fionn McCool’s. It was VERY good. I LOVE LOVE LOVE beets. The chicken breast was grilled with some amazing spices! It was a very satisfying lunch! Yum!

* My afternoon snack included a Starbucks Iced Coffee (I see these becoming a regular occurrence in my life now that the weather is nice) with a Melissa’s Bar of Love YouBar. (someone has to tell me how to link back to older posts so I can link back to the YouBar post. Please! 🙂 )

Workout Re-cap

I thought it was best if I took a day off from running and so I opted for a one hour session on the elliptical at a pretty quick pace and at a Level 5. According to the machine, I burned 680 Calories. The workout felt great from start to finish and was really needed to get rid of that awful pounding headache.

* I was REALLY hungry by the time I got home from work (well from the grocery store on the way home from work). I get regular emails from CookingLight.com and today’s recipe caught my eye: Cashew Chicken!

As a side, I love www.cooklight.com . There are so many wonderful tasty HEALTHY recipes. I also enjoy the Cooking Light magazine. You can never get enough recipe ideas. 

I decided after reading the recipe and seeing that it wasn’t complicated that I would make that for dinner. However, before I got down to cooking, I chowed down on an apple to calm my hungry tummy.

After munching, I got down to business and took out all the necessary ingredients:

Before dealing with the chicken breasts, I chopped up the onions, red peppers, celery, scallions and cashews and set them aside. I also minced some garlic.

Next it was time to cube one pound of skinless, boneless chicken breast and toss it with the soy, sherry *& corn starch mixture. I threw some sesame oil in a skillet and added the chicken and grilled it for 5 minutes or so.

After the 5 minutes, I removed the chicken breast from the skillet and added a little bit more sesame oil and added all the veggies except for the scallions and cashews. I sauted them for a few minutes. Smelling really at this point!

After a few minutes, I added a the chicken again and a sauce which included soy sauce, chicken broth, honey and corn starch. Yummy! I boiled it for a few minutes and then removed it from the heat and added the cashews and scallions.

Unfortunately I came home to find out that I had NO brown rice. I settled for long grain white rice because I was not about to go back out to the grocery store when I was tired and hungry. Oh well. The meal was AWESOME!! So so tasty!!  So fragrant and such a nice mix of flavours! I highly recommend it and I WILL post the recipe this weekend in my Recipe Box along with  few others! I promise!

The only disappointing thing about this dinner is that I didn’t get to enjoy it until about 9:30PM this evening- I am not a huge fan of eating so late because I like to digest a little before bed. It was just a day that didn’t allow for an earlier dinner. 🙂

    The chicken cashew looks delish! I know what it feels like to eat so late in the evening and I don’t like it either. We normally resort to eating sandwiches, either from the deli or homemade.

    That cashew chicken looks amazing! I get the Cooking Light magazine but I hardly ever make recipes from it. I dont know why becasue thats why I get it!

  4. I’m sorry to hear about your friend! She is lucky to have someone so supportive and you in her life. I hope that her problem is sorted out quickly.

    I haven’t had an iced coffee in sooo long. The thought of one really sounds tempting right now. I think I need a caffeine hit!

    I also dislike eating dinner late – but I find I often do. Today I had a really early dinner – at like 6pm – and I much prefer it. Your dinner really is amazing!

  5. Mmmmmmmmm, iced coffee. Starbucks makes the best! I love their iced lattes, as well. I can’t get enough of them when the weather’s nice!

    I love cashew chicken. I admire you for cooking yourself a nice dinner even though you had to eat late! Sometimes when that happens, it seems easier to just grab something somewhere. Cooking at home is always more rewarding, though!
